I’m dreaming of a White Christmas…and Peanut Butter Buckeyes

When it comes to delicious holiday treats, sometimes it’s best to not reinvent the wheel. This classic recipe is one for the ages. So put on your best Christmas sweater and make these peanut butter buckeyes for everyone you know!


  • 1 1/2 cups creamy peanut butter
  • 1/2 cup butter, softened
  • 1 tsp vanilla extract
  • 2 1/2 cups semisweet chocolate chips
  • 2 Tbsp shortening
  • 4 cups powdered sugar


In a medium bowl mix together:

    • 1 ½ cups peanut butter
    • ½ cup (softened) butter
    • 1 tsp vanilla
    • 4 cups confectioners' sugar

(FYI: The mixture will be stiff!)

Cover cookie pan with wax paper

Shape mixture into balls and place on the cookie pan and pop them in the fridge

In a double boiler melt together:

    • 2 ½ cups semi sweet chocolate
    • 2 tablespoons shortening

Pour into bowl and dip balls into the chocolate

Refrigerate for thirty minutes, or until chocolate is firm

Serve in a festive holiday bowl while Bing Crosby sings the gentle sounds of the holidays
